Truth is that it wouldn’t change much: Dee would still eat a lot, would still be a grumpy tsundere, would still be German but instead of grumbling “like father like son” all the time, he’d say “like mother, like daughter” with a HUGE thumbs up in Lizzie’s direction.
Hello! Ah, very interesting question. I’ll answer it but I just want to precise that my thoughts on the subject change pretty often, so take the current version with a grain of salt. 🙂

then yes, I think UT acted as one of the evil nobles and full-time mortician ever since Vincent’s time as the Watchdog. So basically he did the same thing for Vincent than he did for Ciel until the Campania arc: info broker, autopsies, taking care of dead bodies…
I think it’s rather clear he liked his job as a mortician
since he even took care of dead bodies from hospitals, both because of the job in itself and the position that it brought him as a center part of the Watchdog’s investigations. However I wonder if the info broker and doing autopsies parts weren’t Watchdog-only.
Anyway, I always wondered if the situation wasn’t different for when Claudia was the Watchdog though and he became a mortician full time only after she died. Sometimes I even wonder if Vincent had any idea about the ties between his mom and UT, if Klaus is right and UT is the second of Vincent’s evil nobles.
To be honest, not so long ago I initially thought that if UT was one of Claudia’s evil nobles too (or just simply close to her), it would be logical for him to already be by Vincent’s side when he became the Watchdog at 15 years old. However, ever since ch131 I changed my mind.
This chapter kinda confirmed that UT’s main focus definitely is “the Watchdog”: he apparently met our!Ciel when he was 7, he didn’t bother sending gifts for the twins’ birthday unlike Klaus and Dee, which shows he kept more of a distance than other evil nobles and which contrasts with how much he seems to care for this family (or with sketches like this).
I’m not saying that Vincent didn’t want him at home or anything, just that UT could have made some kind of promise to himself and/or Claudia about keeping an eye on the Watchdogs that would follow in her footsteps, which is why he never involved himself more than that with anyone besides the Watchdog, ever since Claudia died.
Besides, it’s something I pointed out before, but I wouldn’t be surprised if UT’s strange appearance was, like, 30% depression and 70% on purpose which would imply that he doesn’t want any reason to fit in either. I mean, we all saw it, he cleaned up good during the Weston arc, so there must be a reason he’d rather constantly act the part of a creeper, especially when he’s “the most beautiful character” of the entire cast.
All that to say, right now I think Claudia’s death was a transition in UT’s history with the P family and he became the character we met in ch6 probably within the first 3 years of Vincent’s time as the Watchdog. And in that case, Klaus is not wrong and UT officially met “Earl Vincent Phantomhive” after he became ”the Undertaker” and after Vincent had already tricked Diedrich.
There you go. That’s my current take on it, which is if UT’s not Cedric K. Ros lmao. I’ll spare you the very complicated versions with this additional detail. xD

So for as long as the fag system held out for the two of them, Diedrich could never say that he saw Vincent doing anything out of the ordinary at Weston during that time.
Oh, of course, Vincent was more of a slacker for prefect’s duty than Dee was but other than that, nothing particularly stood out to Dee, besides the young Earl being incredibly annoying. …And also the abnormal amount of letters he received from time to time.
Worst thing about these letters though, the first and only time Dee did take a look at them and noticed the peculiarity, was that either they were in a language he couldn’t decipher, or this was no real language at all and that proved to be very strange.
“These are from my sister”, Vincent answered that first and only time he noticed that Dee was acting weird about the letters he received, “we speak in code, so that bad and uptight German fags like you won’t be able to read the discussions we share as siblings.“
Obviously, Dee was offended, as with everything when it came to that annoying Phantomhive prick, so he decided to never let curiosity get the better of him with these letters and he never asked again.
[The truth behind these letters? Vincent had become the Watchdog from the moment his mother had died, but acting as the Watchdog from Weston was complicated because he couldn’t ditch the school and play hooky without people getting curious. And if he could somehow manage until his last year, becoming a prefect had rendered the task even more difficult, which is why Frances was ensuring that work was done as per Queen Victoria’s wishes, the siblings exchanging letters in code reporting of Frances’ and Tanaka’s progress for the investigations.]
Back to Dee, proud as he was, he never asked again about these letters, but the end of the year drew near and they finally graduated (which didn’t mean that his position of a fag was over with, as opposed to everyone else and for his greatest misery), and that’s when Phantomhive offered to take the train for a little trip “as a graduation’s present”.
Needless to say that the little trip was actually about finishing the Queen’s last request at the time, through stopping a terrorist group that was supposed to blow up important political figures who were taking the same train as Vincent and Dee.
That’s how Dee finally understood what those letters were all about, amidst gunshots, blood, swords, knives, screaming and Phantomhive’s Japanese butler. Obviously, he vomitted and yelled for a long time at Phantomhive after they barely escaped from this train alive and he ended up having to sit down when he realized that the younger man who fought alongside Tanaka was actually Phantomhive’s sister in disguise.
